This Bircher Museli recipe is directly from the “Eating for Eye Health” cook book. This is a recipe your eyes will thank you for!

Ingredients
3 cups rolled oats
375 mls apple juice
375 mls orange juice
2 apples, grated
2 pears, grated
200 mls low-fat vanilla yoghurt
50 gms slivered almonds
2 tbsp honey
2 bananas
1 punnet blueberries

Method
1. Soak the oats in the apple and orange juice in a bowl and refrigerate overnight.
2. In the morning, fold through the apples, pears, yoghurt, almonds and half the honey.
3.Serve topped with sliced banana and blueberries and drizzle with the remaining honey.
