This is one of Beck’s personal favourites! Great for both a quick simple breakfast or a delicious dessert.

Filling

  • 2 Cups frozen mixed berries (personally blackberry and raspberry is a fav!)
  • 5 dates – chopped
  • 1/2 tsp cinnamon

Topping

  • 1 cups oats (could also use quinoa flakes)
  • 1 tsp cinnomon
  • 1/2 cup mixed nuts – chopped (walnuts,almonds, cashews and macadamia nuts are great for your eyes)
  • 1 tbsp coconut oil
  • 3 tbsp honey

Meathod

  • Pop berries, chopped dates and cinnamon in to a small saucepan and cook on low for 20 minutes (don’t forget to stir regularly)
  • While your filling is cooking, prepare toppings. Combine oats, nuts and cinnamon in a bowl. In a medium sized fry pan, melt the coconut oil and 2 tbsp honey. Add oats mix and fry on low for 10 minutes.
  • Once your berries are a little mushy, spoon in to your baking dish (you could do 4 small ramekins or 1 large dish)
  • Cook at 180c for 30 minutes.
  • Allow to cool for 15 minutes before serving. Top with some yogurt and drizzle of honey (or if you want something a little sweeter ice cream or custard)

*A great option for this is using up any left of fruit/nuts you have. It also stores well in the fridge in an airtight container for up to 4 days.
